That’s no exaggeration. They literally are my favorite food. I eat them every night while I watch my shows and unwind. A little background: Since getting totally into green smoothies, I have been buying tons and tons of fresh, seasonal fruit to freeze and use for smoothies. I noticed that my usually abundant blueberry supply was running low, so I knew something was going on. Turns out my handsome, fruit loving husband had been snacking on these little dimes straight out of the freezer. And now I do too!
Freezing them is super simple, just give them a rinse and drain, then spread them out on a cookie sheet covered in tin foil. Pop them in your freezer and in a few hours: voila, a frozen delight! Once frozen, you can take them off the cookie sheet and put them in Ziploc baggies or Tupperware. They keep for months. I personally like them not rock hard, so I take some out, put them in a little bowl and let them sit for a few minutes. Sweet, refreshing and did I mention that they go great with Champagne?!
Want some more reasons to snack on them? Blueberries are very healthy, low in calories, high in fiber and have one of the highest antioxidant capacities among all fruits, vegetables, spices and seasonings. Antioxidants are essential to optimizing health by helping to combat the free radicals that can damage cellular structures as well as DNA. Sounds good right? Enjoy!
